Serves: 8 small pancakes
  • 4 eggs
  • ½ cup canned organic pumpkin
  • 1 tsp. vanilla
  • 1 tbsp monk fruit or coconut sugar
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • ¼ tsp. baking soda
  • 1 tbsp. coconut flour
  • 1 tbsp. organic ghee
  1. Whisk eggs, pumpkin, vanilla, and mashed banana together. Sift the pumpkin pie spice, cinnamon and baking soda into wet ingredients. Grease skillet with organic butter, ghee or coconut oil and spoon batter into the skillet to make pancakes. Will be much runnier than traditional pancake mix. When bubbles appear, about 3 minutes per side, flip the pancake once and finish cooking.
