Pumpkin Pancakes

Serves: 8 small pancakes
Pumpkin Pancakes
  • 4 eggs
  • ½ cup canned organic pumpkin
  • 1 tsp. vanilla
  • 1 mashed banana OR (for kids ¼ cup maple syrup)
  • 1 tsp. pumpkin pie spice
  • 1 tsp. cinnamon
  • ¼ tsp. baking soda
  • 1 tbsp. coconut flour
  • 1 tbsp. organic ghee
  1. Whisk eggs, pumpkin, vanilla, and mashed banana together. Sift the pumpkin pie spice, cinnamon and baking soda into wet ingredients. Grease skillet with organic butter and spoon batter into the skillet to make pancakes. Will be much more runny than traditional pancake mix. When bubbles appear, flip the pancake once and finish cooking.
