Tuna Lettuce Boats
*For a snack you can eat ½ the can of tuna. For a meal you can eat the entire can.

- 12 oz. solid white tuna, drained
- 11/2 tbsp. Mayo OR (1 tbsp. extra virgin olive oil plus juice from ½ a lemon)
- 1 tsp. mustard
- 1 celery rib
- 10-12 cherry tomatoes
- ½ small red onion
- ½ tsp. salt
- ¼ tsp. pepper
- 2-3 romaine lettuce leaves whole
- Chop celery and onion into small, uniformly sized pieces and place into a large bowl. Halve the cherry tomatoes and add them. Then add the drained tuna. In a separate bowl, Mix olive oil & lemon juice OR mayo, mustard, salt, and pepper. (How mushed you make the avocado is up to you.) Combine the dressing with the tuna and veggies. Mix well. (Consider using clean hands as it makes it easier to mix ingredients and preserve some of the tuna chunks). Refrigerate or serve immediately.
