Sweet Potato Fries

  • 3 medium sweet potatoes, washed and optionally peeled
  • 1-2 tbsp. coconut oil
  • a dash of salt to taste
  • Optional: 1½ tsp. paprika, 1½ tsp. cumin optional ¼ tsp. cayenne (only if you like spicy)
  1. Preheat your oven to 425 F. Julienne sweet potatoes. They should be uniform to each other for even baking. In a mixing bowl, cover the wedges with the melted fat and add the Sea salt. Toss and mix very well until potatoes are evenly coated. Transfer potatoes to a baking dish and bake for 30 minutes. Turn, toss and stir after 15 minutes, adding more oil or spices, if desired. Cook for more or less than 30 minutes, if necessary, depending on size of fries. Once cooled, enjoy!
