Smoked Salmon Benedict over Spinach

Ingredients
  • Wild smoked salmon (Trader Joe’s)
  • 1 bag Organic Spinach
  • 1-diced shallot
  • Olive Oil
  • 2 free-range organic eggs
Instructions
  1. Preheat oven to 225 degrees. Place salmon in oven until warm. Poach or pan fry the eggs. Peel and dice shallot. Heat olive oil over medium-low heat, and add shallot until it begins to caramelize. Add spinach and sauté until gently wilted. Sprinkle with sea salt and garlic salt.
