Smoked Salmon Benedict over Spinach

Ingredients
- Wild smoked salmon (Trader Joe’s)
- 1 bag Organic Spinach
- 1-diced shallot
- Olive Oil
- 2 free-range organic eggs
Instructions
- Preheat oven to 225 degrees. Place salmon in oven until warm. Poach or pan fry the eggs. Peel and dice shallot. Heat olive oil over medium-low heat, and add shallot until it begins to caramelize. Add spinach and sauté until gently wilted. Sprinkle with sea salt and garlic salt.
