Serves: 4
  • 1 organic large cauliflower
  • 1 pat organic butter/Ghee
  • ⅓ cup organic coconut milk
  • ¼ - ½ tsp. sea salt
  • Optional - 1 shallot
  1. Break up cauliflower into florets. Place in a pot to steam. Bring water to a boil and reduce heat slightly. Steam until soft. Transfer to a large blender. Add butter, coconut milk and sea salt. Blend until smooth. You may need to add additional coconut milk to help with the mixing process and consistency. Can also use vegetable or chicken stock, if the cauliflower is too thick. Serve instead of potatoes! Delicious!
