Fiesta Chicken with Cilantro Lime Slaw

Ingredients
- Chicken:
- 1½ lbs. organic chicken tenders or breast (TJ's are great)
- 1-2 tbsp. organic raw virgin coconut oil
- 1-2 tbsp. Taco or Mexican Seasoning (Spicely Organic Gluten Free Seasonings, Whole Foods & Lunardi’s)
- Sea Salt, seasoned to taste
- Slaw:
- 1 head of organic cabbage thinly shredded in food processor (Or purchase pre-shredded to save time)
- 4 large organic carrots, shredded in a food processor (Plus or minus depending on how much you want in your slaw)
- Juice of 1 lime
- ¼ cup cilantro, finely chopped
- Garnish:
- Caramelized onions
- 1 tbsp. organic ghee or butter
- ½ - 1 sweet onion, sliced
- 1 avocado, sliced
Instructions
- Shred cabbage. Place in a bowl. Shred carrots. Toss cabbage and carrots together in a bowl. Add ¼ cup cilantro. Juice 1 lime in a shallow dish. Pour ¾ lime mixture over cabbage; add cilantro and toss. Heat coconut oil over medium heat. Slice chicken into bite size pieces. Add chicken and spices to pan. Sauté until cooked through. In a second pan, add 1 tbsp. of butter and heat over medium heat and add sliced onion. Season with a pinch of Sea Salt; caramelize onion for 10 minutes or so. Serve chicken over a bed of cilantro lime slaw topped with warm caramelized onions and avocado.
