Crockpot Spaghetti Squash Bolognese

Ingredients
  • 1 medium spaghetti squash
  • 1 jar organic low sugar marinara sauce
  • 1lb extra lean ground turkey or organic ground beef
  • 1 bag frozen pea & carrots
  • 1 bag frozen broccoli
  • Optional: zucchini, yellow squash, bell peppers
  • Add fresh spinach last 15 minutes of cooking
Instructions
  1. Turn on crockpot. On low it will cook for 5 hours, on high it will need 3 hours to cook.
  2. Add entire jar of sauce, veggies and ground beef/ground turkey to crockpot.
  3. Break up meat the best you can & season with a little sea salt.
  4. Halve the squash lengthwise, scoop out seeds and arrange cut side down on top of ingredients in crockpot.
  5. Put on the lid
  6. Cook on low for 5 hours or high for 3 hours.
  7. The last 10-15 minutes, you can mix in fresh spinach for extra greens.
  8. When cool enough to handle, scrape out the pulp into the crockpot.
  9. Breakup meat again and mix in spaghetti squash.
  10. Scoop out and serve!
