Day 1 Paleo Dinner:
Quick and Easy Mediterranean Stuffed Chicken
All of your ingredients can be found at Trader Joe’s
Two Organic Free -Range Chicken Breasts
1/2 can of artichoke hearts TJ’s
2T of sundried tomato strips TJ’s
1 bag of fresh spinach to steam or saute
2T olive tampanade TJ’s
2T Pine Nuts TJ’s
Cut through the center of your chicken breasts almost all the way through butterfly them) sauté in olive oil and a pinch of sea salt and pepper for 5 minutes each side (set aside)
Saute spinach until lightly wilted add the remaining ingrediants and heat until warm.
Should take all of about 15 minutes! Viola!
