Delicious Lamb Burger with Green goddess Dressing

Ingredients
- 1 pound ground pasture-raised lamb
- 1 red onion grated or finely chopped
- 3 garlic cloves, finely crushed, divided
- 5 tablespoons fresh mint, finely chopped
- 3 teaspoons ground coriander
- 1 teaspoon Dijon mustard
- Green Goddess Dressing: This makes about a full 32 ounce mason jar worth of sauce. It's that delicious! You can half the recipe if you'd like but every time I've done that, I wished I had made more:
- 1 tsp sea salt
- ½ tbsp minced garlic
- 2 tbsp red onion
- ¾ tbsp chopped basil
- ¾ tbsp chopped cilantro
- ¾ tbsp chopped parsley
- 31/2 tablespoon chopped dill
- ⅓ cup Greek yogurt
- 21/2 cups avocado mayo
- ¾ tbsp lemon juice
- ¾ tbsp white wine vinegar
- ¾ tbsp hot sauce
- Optional: 1-2 tsp of melted honey if it's too tart
Instructions
- In a bowl, mix together the minced lamb with the grated onion, minced garlic cloves, tablespoons of chopped mint, ground coriander, and Dijon mustard.
- Form the mixture into 4 to 8 burger patties and then chill them in the fridge until they are ready to cook.
- In a blender mix together the mayonnaise, yogurt plus all other ingredients for the dressing. Blend until fully mixed. Refrigerate this sauce until ready to use.
- Preheat a skillet on medium- high heat. Place the pattied on a lightly greased pan. Cook 6 minutes each side.
- I love serving this over a bed of mixed greens with roasted beets, walnuts, pumpkin seeds and green goddess dressing. Delicious!
