Ingredients
  • 2 chicken breast, cut into ¾-inch (2cm) pieces
  • 1 tablespoon coconut oil
  • ½ lime, juiced
  • 1 tablespoon honey
  • 6 strawberries, sliced
  • 1 avocado, diced
  • 1 cucumber, peeled and chopped
  • 4 cups Romaine and arugula lettuce, shredded
  • Strawberry-Lime Dressing
  • Makes 1 serving
  • Dressing: Ingredients
  • • ¼ cup (60ml) olive oil
  • • 6 strawberries
  • • 1 tablespoon (15ml) lime juice
  • • ¼ teaspoon ground ginger
  • • Salt to taste
  • Directions
  • Blend all ingredients together until smooth. Drizzle over salad
Instructions
  1. Heat coconut oil in a skillet over medium-high heat. Add chopped chicken and sauté until chicken is nearly cooked, about 10 minutes
  2. Add lime juice and honey to pan. Stir to coat chicken.
  3. Cover pan. Lower heat to medium, and let the chicken finish cooking, about 5 minutes. Set aside In a separate bowl, add salad ingredients and toss.
  4. Place chicken over salad greens, drizzle with Strawberry-Lime Dressing
  5. Salt
