Delicious, high protein, low glycemic, high fiber brownie. You'll never guess the main ingredient. Have even served these and dinner parties. Added collagen powder too for added protein and skin support.

Ingredients
  • 15 ounces organic black beans, canned, rinsed, and drained
  • 3 large eggs
  • 4 tbsp melted butter
  • 1 teaspoon vanilla extract
  • ½ cup coconut sugar cup or brown sugar
  • 1 scoop Collagen powder (tasteless and orderless)
  • ¼ cup monk fruit or Lakanto sugar
  • ⅓ cup (a little less than a ⅓ cup) Guittard cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ tsp finely ground or instant coffee, optional but delicious
  • ½ cup dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Rinse beans with warm water. Place 1 15-oz can organic black beans in a food processor, Puree into a rough paste. In a large bowl, mix together the bean puree, 3 large eggs, 4 tbsp melted butter, and 1 tsp vanilla extract.
  3. In a separate bowl, combine ¼ cup unsweetened cocoa powder, ¾ cup sugar, 1 tsp baking powder, ¼ tsp salt, and coffee. Add the dry ingredients to the wets, then stir in ½ cup semi-sweet chocolate chips.
  4. Line an 8 x 8-inch pan with butter or parchment paper. Fill with brownie mixture and top with a few chocolate chips.
  5. Bake the brownies for 25 minutes, or until a skewer comes out clean.
  6. Let the brownies cool in the pan completely, before slicing and serving.
