Creamy Avocado Dressing

Ingredients
- 1 avocado
- 3 tbsp. olive oil
- 1 tbsp. lemon juice
- ½ C water
- ¼ t. Celtic sea salt
- ¼ t. black pepper
Instructions
- Place avocado, olive oil, lemon juice & water in Vitamix or blender. Puree until smooth. Then blend in salt and pepper. Serve over greens or chopped salad.
