Delicious, kid-approved, quick easy meal. Great for leftovers too.

Ingredients
  • 1 bag riced cauliflower. I love Trader Joe's frozen organic riced cauliflower.
  • 2 Tsp sesame oil
  • 1 cup frozen organic veggies (peas, carrots, broccoli, etc.)
  • 3-4 tbsp. gluten-free tamari or coconut aminos (more or less to taste)
  • 2-3 eggs, lightly beaten
  • ¼ inch piece of grated or Jared fresh ginger
  • Optional: depending on time
  • 2 tbsp chopped green onions (optional)
Instructions
  1. Preheat the Pan – Heat a large skillet or wok over medium heat.
  2. Sauté Aromatics – Add sesame oil and ginger, stirring until fragrant.
  3. Cook the Vegetables – Add riced cauliflower and frozen vegetables. Sauté until tender.
  4. Scramble the Eggs – Push the veggies to the edges of the pan, creating a circle in the center. Pour the beaten eggs into the middle and scramble them with a spatula. Once nearly cooked but still soft, mix them into the vegetable and cauliflower mixture.
  5. Season the Dish – Stir in tamari or coconut aminos to taste.
  6. Finish & Serve – Add chopped green onions if desired. For extra protein, mix in cooked shrimp or chicken.
