Crockpot Spaghetti Squash Bolognese

Ingredients
- 1 medium spaghetti squash
- 1 jar organic low sugar marinara sauce
- 1lb extra lean ground turkey or organic ground beef
- 1 bag frozen pea & carrots
- 1 bag frozen broccoli
- Optional: zucchini, yellow squash, bell peppers
- Add fresh spinach last 15 minutes of cooking
Instructions
- Turn on crockpot. On low it will cook for 5 hours, on high it will need 3 hours to cook.
- Add entire jar of sauce, veggies and ground beef/ground turkey to crockpot.
- Break up meat the best you can & season with a little sea salt.
- Halve the squash lengthwise, scoop out seeds and arrange cut side down on top of ingredients in crockpot.
- Put on the lid
- Cook on low for 5 hours or high for 3 hours.
- The last 10-15 minutes, you can mix in fresh spinach for extra greens.
- When cool enough to handle, scrape out the pulp into the crockpot.
- Breakup meat again and mix in spaghetti squash.
- Scoop out and serve!
