Zippy Zoodles Zucchini "Noodles"

Zoodles (zucchini noodles) ready to make and eat in less than 10 minutes. Kid approved and fun to make. An amazing noodle alternative.
  • 2 medium zucchini
  • Celtic Sea salt
  • 2-4 tbsp. pesto
  1. Heat pesto
  2. Peel zucchini
  3. Use a spiralizer or peeler to make "zoodles"
  4. Place zoodles in colander for 15 minutes and sprinkle generously with salt, mixing the noodles by hand to coat them. This draws out the moisture from the noodles, greatly improving their texture. If you’re pressed for time, you can skip this step, but the noodles will be more watery.
  5. Mix with pesto and serve.
  6. Add protein of your choice, I used these Colameco's Gluten free turkey meatballs I found at Sprouts. for the spiralizer my kids used to make our zoodles.
