- 1 organic free-range chicken breast
- 2 tsp.olive oil or fat
- ½ can of artichoke hearts
- 2 tbsp. of sundried tomato strips
- ½ a box frozen organic spinach or 5 cups of fresh spinach to sauté
- 1-2 tbsp. olive tapenade (Trader Joe’s)
- 1 tbsp. pine nuts
- ⅛ tsp sea salt or to taste
- Pinch of pepper
- Cut chicken breast into strips or butterfly it. Sauté in pure virgin olive oil and season with sea salt and pepper for 10 minute or until chicken is cooked all the way through. Set chicken aside. Using the same pan- sauté spinach until lightly wilted, add artichoke hearts, sundried tomatoes, & olive tapenade. Mix, and heat until warm 2-5 minute. Top with pine nuts and chicken. Should take all of about 15 minutes! Viola!
